For Christmas, a friend gave us an ice cream maker and it’s been so fun trying to think up healthy-ish flavors to try out. Our most recent one came out so good I thought I’d share here.
Recipe for Healthyish Homemade Ice Cream
1/2 teaspoon vanilla extract
sea salt to taste
1 can (13.66oz) of organic coconut milk
1/4 c mini chocolate chips
1/4 c unsweetened cacao nibs
stevia to taste, optional
You blend all the ingredients aside from the cacao nibs and chocolate chips in a blender, and then start the ice cream maker, and pour the ingredients in. Add the chocolate chips and cacao nibs, and let it churn for 10 - 20 minutes. You’ll see it start to thicken and turn into an ice cream consistency. Stop the machine when it turns into the consistency you want, scoop, dish, eat and enjoy.
