Sometimes- no, sorry- often I struggle with what to throw together for a meal. This may not be an award-winner by any means, but it is healthy, easy and quick to make which sometimes trumps whether or not it's worthy of a spot on the table at a dinner party. Ingredients:
Chopped organic green beans (I used a frozen bag)
1 can of organic kidney beans
1 cup quinoa (I used a mix of quinoa and rice because I was low on both)
Cook 1 cup quinoa in 2 cups of water (takes about 15 minutes or so). In a separate pot, pop the green beans in boiling water for two minutes, strain and rinse with cold water. Open the can of kidney beans, rinse with water, and then put all the ingredients together. Eat and enjoy.
