Happy Fall, everyone! Allison is back with the perfect fall dish, using one of my favorite seasonings! I’m obsessed with putting this stuff on avocado toast or eggs, but I haven’t tried it yet on butternut squash. I’m intrigued and excited! I’m not sure if this is a Millennial thing, a Gen Z thing - or if this transcends generations - but I am an ardent fan of everything bagel seasoning, including Trader Joe’s cult-favorite seasoning blend. I have three bottles of it: two at home, and one at my office...which I haven’t been to since March, I can only hope the ol’ gal is holding up, locked away in my desk drawer!
I use this seasoning to top many things, namely scrambled eggs, avocado slices, and macaroni and cheese. I have expanded upon this and have added this to many of my vegetables; I’ll tell ya, in my opinion, this seasoning doesn’t work on everything. Broccoli? Eh, it doesn’t quite do it for me. Green beans? Love it!
A nicely roasted winter squash can also benefit from a shake or two of this seasoning. When you add a touch of maple to the mix, the contrast of both flavors and textures make for a truly delightful side dish for your meals this autumn and winter. I originally made this a few times without the maple syrup, but felt it was lacking. Upon adding a touch of maple, I felt like I found a missing puzzle piece.

Maple Everything Bagel Roasted Butternut Squash
Ingredients:
2 cups butternut squash, cubed
1 tablespoon Everything Bagel Seasoning
2 tablespoons oil of choice (I use olive oil or refined coconut oil)
1 tablespoon maple syrup
Notes:
Butternut squash and I are not simpatico - I hate cutting up winter squashes, no shame in my game! - and I’ll always treat myself to the pre-cubed option at the grocery store. Do not use frozen butternut squash in this recipe, it will not roast as well as fresh!
If you do not have Everything Bagel Seasoning, check your pantry for the following ingredients to make your own: Sesame seeds, poppy seeds, minced dried garlic, minced dried onion, and sea salt.
Directions:
1.) Preheat oven to 425 °F.
2.) If cutting butternut squash yourself, peel squash, remove seeds, and cube into bite-sized pieces and place in large bowl; of using pre-cubed squash, place in large bowl. Toss squash with Everything Bagel Seasoning, oil, and maple syrup until all pieces are evenly coated.
3.) Line a rimmed baking sheet with parchment paper or lightly oil bottom of baking sheet. Spread squash evenly; shake on a bit more Everything Bagel Seasoning, if desired.
4.) Bake for 25 - 30 minutes or until lightly browned; give the pan a quick shake at the 15 minute mark.
5.) Remove from oven and serve immediately; store any leftovers in an airtight container and store in fridge for up to three days.
