Hey all, it's Madison with another guest post. This time I wanted to offer readers a healthy alternative to traditional Fourth of July meals. Food served on the Fourth is typically heavy on the grease, processed carbs, and saturated fat. These foods are difficult for our bodies to digest and offer little nutritional value. This post re-imagine some classic Fourth of July meals, substituting nutritive ingredients and adding in ferments as a digestive aid. Every recipe in this post offers a great way to introduce healthy probiotics into your system.

They are incredibly simple and the variations are endless! Here, I’ve made a Monkey Bark, Macadamia Bark, and Blueberry Almond Bark. My favorite is the Monkey Bark because it tastes like a Reese’s!!
One of the things I love most about my mom is that she was never one to follow a recipe. If she didn't have a particular ingredient that a recipe called for, she'd sub for something similar, get creative and put her own little twist on it by adding a completely unrelated ingredient or just skip it. There were definitely some duds in the mix but more often than not, she came up with some awesome dishes.

My favorite part of the holidays was decorating gingerbread houses that my mom would bake from scratch, design and assemble herself. I loved that the gingerbread house always ended up reflecting each and every person in our family - we’d all decorate it together, all adding our personal touches. To me, the holidays are all about spending time with loved ones and spreading love and what better way to spread love around the holidays than with a little baking?!

My cousins are going back to school this week so I thought it'd be appropriate to make some healthy-ish snacks for them to have on hand in the afternoons. September is National Yoga Month, so when Yummi Yogi sent some cookie cutters to the office, we got right to work making Yoga Pose Paleo Cookies.
As part of our partnership with Kohl's #MakeYourMove campaign, we have been focusing on doing more of the little things that make us happy. A few weeks ago, the lovely Hayley and Bill from Primal Palate sent us a copy of one of their cookbooks, Gather: The art of Paleo entertaining. It's a beautifully done cookbook that has creative recipes categorized by season. We over here at the YBC office love baked goods, but because I follow the GAPS diet (similar to Paleo), I rarely do any baking. Inspired by the book, Lauren took matters into her own hands and made Primal Palate's orange scones.
I had been craving something sweet for ages, and I had some bananas on their last leg, so I figured I'd kill two birds with one stone and whip up something since I finally learned how to use the oven at our new place (it's the little things, people!). Sometimes mistakes are blessings in disguise, because I had hoped for a cookie but they wound up being a bread-like consistency, which is awesome because who doesn't like banana bread?! Anyway, these little banana bread bites made for a great snack and hit the spot, so I thought I'd share the recipe here.
After the delicious marshmallows I made a couple weeks ago, I wasn't really sure how else to use the gelatin powder I had purchased. I bought a two pound jar, so I had a ton to use! I had heard about putting a scoop in protein drinks and smoothies, but I couldn't think of a recipe I could use it in. One morning, Greg said, "Why don't you just make jello?" And so I did.
Years ago in college, Thursday was better known as Thirsty Thursday, when we'd all head to the local watering hole where the drinks were cheap and the music was loud. Well, times have a-changed, and last Thursday found me sitting in my favorite pink pajamas at 10pm, whipping some gooey gelatin mixture (by hand, I might add) with a weird egg spatula because it was the closest thing I could find in our rental to a whisk. My arm just about fell off, but other than that, these came out incredible! I likely won't be making them often just due to the fact that they're nearly all honey, but they make for a quick snack after workouts and a good dessert.
I am still going strong on the GAPS diet, and am still feeling great. I usually crave a sweet snack in the middle of the afternoon, but regular ice cream is out of the question, unfortunately. The good news is that I finally created the perfect ice cream consistency and have been experimenting with different flavors. Matcha is naturally caffeinated, so it's a nice pick-me-up, and the homemade yogurt in the recipe offers some probiotics as well.
At our Ibiza yoga retreat, we were blessed with an amazing chef named Chita. She was one of those people who immediately felt like family. She spoiled us with her amazing dishes and good energy, and I'll never forget her. One of the desserts we had was a delicious mint chocolate orange dish that I tried to recreate today.
Admittedly, avocado and chocolate sound like they go as well together as scrambled eggs and caramel sauce, but believe me, you're missing out if you avoid this pairing. I love having a snack at night, and these fudgsicles do the trick. I love that they're packed with healthy stuff like probiotics from the yogurt and healthy fats from the avocado, but they still taste indulgent. They're also easy to hail to make, so that basically seals the deal.
It's funny the things that stand out to you when reminiscing about a trip. One of the things that stands out in my mind about my trip to Dubai? The figs. They were absolutely perfect. Super soft as you bite in, but crunchy when you get to the little seeds. Sweet without being overwhelming and were basically the most perfect snack while out and about. Sigh.
Anyway, fig newtons used to be my favorite growing up, so when the idea popped into my head to make a healthier cookie version, I ran with it. The end result is everything you want in a healthy cookie - a soft and chewy cookie with a hint of almond, a sweet and candy-like fig topping with that signature pop of the seeds. The only problem is working up enough self control so you don't eat the entire batch.
If you follow me on twitter, then yes, this is the ice cream that is to blame for my chipped tooth. My advice, if you care about your teeth, is to not allow your ice cream to get freezer burn, and if it does, do not eat said ice cream. :)
Anyway! This is one of the desserts I'd love to just have constantly in the crockpot. It makes the whole house smell like Christmas, and because the apples are thoroughly cooked and there isn't floury dough, it's easy on the digestive system. Yeah!
Afternoon snacks in my household are mostly of the fruit variety - yogurt with berries, apples with almond butter, dried fruit and nuts, etc., so it's nice to switch it up for something a little heartier. This banana zucchini loaf was such a success I made it twice in one week and served the second loaf at a breakfast I hosted for a couple friends from work. It's moist, fluffy, and fantastic with a cup of coffee to combat the afternoon slump.
It's become a little tradition that my husband makes me a cake for my birthday. Last year it was a red velvet cake with beets for coloring (which was unreal!), but this year I didn't have that option, as I'm on the GAPS diet. Honestly, I wouldn't have minded breaking the diet for a slice of rich cake, but the truth is that my stomach isn't quite back to normal since my trip to Athens, where I ate baklava, and other traditional dishes that were not on the diet.
